image PEPATELLI DI NONNA  Here is a throwback to Christmas biscotti, pepatelli. This derives from the word “pepe” which means pepper in Italian.  In Campobasso, my Nonna’s bis nonna, or great grandmother, used to actually use pepper or pepe to bake these cookies.   • Forno a 350 gradi, fare cuocere per 20 minuti massimo (x2 per doppia porzione)
  • Amalgamare mezzo chilo di mandorle con il miele poi aggiungere le uova e gli altri ingredienti)
  • Dividere l’impasto in due o tre parti, poi stendere su della carta oleata
  • Si cuoce e poi si taglia a pezzi (dopo raffreddato come nell’esempio)
  • Sono pronti ad’assaggiare!  😀

Ingredienti

  • Mezzo chilo (500 grammi) di miele, 500 grammi di mandorle (si possono arrostire al forno prima della preparazione dell’impasto)
  • un cucchiaio di cioccolato in polvere (Nonna usa Nesquick in Canada ahuahua)
  • 2 uova
  • 2 cucchiaini di lievito magic powder
  • Una buccia di arancio grattugiato
  • farina (3 tazze) *Nonna usa la farina “All purpose flour” di Costco

  • Preheat oven to 350 degrees, and let dough cook for no longer than 20 minutes (2x if the portion is doubled)
  • Mix half a kilo (500 grams) of almonds with honey (500 grams) in a bowl, along with all the remaining ingredients
  • Divide the dough into three halves (like shown in the silly photo of me above haha) and place them on cooking sheets (carta oleata in Italian)
  • Cook the dough, and once finished, let it cool down and cut the halves into small cookie portions (as shown in first photograph)
  • They are reading for tasting!

Ingredients

  • Half a kilo or 500 grams of honey, and 500 grams of almonds (can be roasted in the oven prior to preparing cookies if this is your preference)
  • 1 table spoon of cacao powder
  • 2 eggs
  • 2 teaspoons of “Magic powder” yeast
  • 1 grated orange peel
  • 3 cups of flour  **TIP Nonna always uses Robinhood or the All-purpose flour from Costco

Ciao a tutti! Oggi ho deciso di preparare dei beignets buonissimi!

To begin/ Per iniziare la preparazione:

35 minuti!

Place 3 eggs in a large mixing bowl and mix, add half a cup of vegetable/ Canola oil, then slowly add 1 1/2 cups of all purpose flour, then add one teaspoon of Magic Powder. Add lemon zest by grating a lemon peel for extra flavour!

Then, let mix together all ingredients until a malleable ball of dough is formed.

Let sit for 30 minutes in order for it to rise

Tagliare a strisce and poi girarli.

Cut into long strips, and shape into circles. Press the two ends together to  close the donut.

  1. My nonna (Maria also!) Makes these too! She, her sister and mother come from Campania, a small village outside of Campobasso and they make these biscuits all the time! So good to see this!
