In need of a quick prep (max 20 minute) side dish to serve alongside meat and maybe some vino rosso?!
Here is my newest recipe:
- 6 large potatoes (wash and peel)
- 1/4 cup of Spanish onions
- 1 garlic clove
- 1/2 cup of extra virgin olive oil
- salt and pepper
- 1/2 an Italian soppressata
- Wash, peel and boil potatoes in a large pot
- Strain all water
- Add some olive oil to the pot, and mix
- chop up the soppressata into small cubes
- Mix together on low heat
