Here is my newest recipe:

Ingredienti:

  • 6 large potatoes (wash and peel)
  • 1/4 cup of Spanish onions
  • 1 garlic clove
  • parsley
  • 1/2 cup of extra virgin olive oil
  • salt and pepper
  • 1/2 an Italian soppressata
  1. Wash, peel and boil potatoes in a large pot
  2. Strain all water
  3. Add some olive oil to the pot, and mix
  4. chop up the soppressata into small cubes
  5. Mix together on low heat
  6. SERVE!!

Pasky (Pasquale) my 9 month old Rottweiler is checking out all the smells…he will stick to his Science Diet large breed puppy food. La session d’examen s’approche et le chiot doit endurer mes journées d’études. Toutefois, il faut bien manger pour mieux se concentrer sur les décisions de la Cour suprême du Canada :P. Voici une recette que je prépare souvent quand je suis pressée. Je recommande l’utilisation des légumes de la marque Europe’s Best (MD), qui sont cueillis, surgelés, naturels et prélavés–donc  ils sont prêts à manger ou prêts à faire cuire.

Bucatini confortanti/Bucatini réconfort
  • Preparazione/Préparation: 25
  • Tempo di cottura/ Temps de cuisson: 15
  • Porzioni/ Portion: 2-4

Ingredienti:

  • 500 g de ton RIO MARE
  • huile d’olive
  • 500 g de Bucatini (Barilla/ Garofalo sont mes préférés)
  • 1 gousse d’ail
  • 1 cube de bouillon (Star/ Aurora Knorr)
  • 1 oignon
  • carottes
  • 1/4 tasse de pois verts entiers
  • 1/2 tasse de piment rouge (ou votre préférence)
  • ÉTAPE 1

    Couper finement l’ail et le persil italien. Couper grossièrement l’oignon, le piment rouge et les carottes. Ajouter les pois verts entiers.

  • ÉTAPE 2

    Remplir un grand chaudron avec de l’eau pour faire cuire la pasta. Mon choix serait  des bucatini car il sont délicieux al dente avec des légumes. Ajouter le sel avant de porter à l’eau à l’ébullition. Passer à l’étape de verser les légumes dans une poêle en attendant que l’eau bouille pendant 10 minutes. Servez-vous de vos cellulaires pour vous synchroniser.

  • ÉTAPE 3

    Faire revenir l’ail avec l’huile dans un grand chaudron pendant 1 minute à feu moyen. Il est plus facile si le feu est déjà allumé. Incorporer les légumes et le cube de bouillon au légumes remuer et couvrir, et laisser reposer pendant 5 minutes.

  • ÉTAPE 4

    Lorsque les légumes sont cuits, retirer du feu. Ajouter le ton RIO MARE (avec huile d’olive) et verser les bucatini dans la poêle.

  • ÉTAPE 5

    Ajouter les bucatini à la poêle et mélanger le tout, il est utile d’ajouter un peu d’huile d’olive dans le grand chaudron afin d’éviter que la pasta ne colle.

Ciao a tutti! I am happy to be blogging again. Here is a great recipe to make when you are out of food ideas.

   Here are the ingredients: olive oil, chicken broth and stock, arborio rice and a white onion. 
First, place the olive oil and onions in a pot on medium heat. Then place half a cup of rice and slowly toast the rice. 

Then, add the chicken broth and continuously stir as the rice begins to cook.

Leave the heat on high for about 20 minutes, then lower to low. 

  Finally, add a small block of chicken stock for extra flavouring.
Then serve !

   

Spending too much $$ on Lunch?

When we wake up in the morning, often we are lazy and don’t feel like preparing a lunch. By the time lunch rolls around at the office, we end up spending between 10-15$ per day. This is way too much to spend on a daily basis.

Here is a quick lunch idea that is healthy, tasty and very inexpensive. Ready in under 5 minutes.

Corn salad:

Mix 2 cans of corn (strain the water out)

Chop a sweet white onion

Add some arugula

Add some cherry tomatoes

Sprinkle salt, and add olive oil

When hockey playoffs are in full force, throwing a homemade pizza party with family and friends is the best thing to do!

Recipe for the dough for 3 large rectangular pizzas:

    ****Add 12 cups of all purpose flour into a large mixing bow (Nonna uses flour from Costco, she says it is the best bang for your buck–lo dice in italiano ovviamente :P****

  • then add 6 cups of water and instant yeast
  • mix together with hands for about 10 minutes
  • let the mixture sit for about two hours in a cool shady place (cover with cloth)
  • then spread the onto a pre-greased pan
  • preheat oven to 350 degrees and allow to cook for 20 minutes until crispy

Then enjoy!!

  • 1 1/2 pounds Yukon Gold potatoes
  • 1/2 cup plus 1 tablespoon matzo cake meal
  • 1/2 cup plus 1 tablespoon potato starch
  • 1/4 cup grated Parmesan
  • 1/4 teaspoon ground nutmeg, to taste
  • 3 egg yolks

1. Bake potatoes on a bed of kosher salt on a sheet pan at 400 degrees F for about an hour. Use a knife to check if they are done.

2. Peel them while they are still hot, and pass through a potato ricer or food mill. Allow to cool completely.

2. Mix matzo cake meal, potato starch, Parmesan cheese and nutmeg in a medium bowl.

3. In a separate large bowl, added cooled potatoes and mix with the egg yolks.

4. Add the cake meal mix to the potato mix, and knead and fold until incorporated completely.

What’s your Saturday Night Dinner?

Saturday night in my household is usually bistecca or steak night!

We use Moishes steak spice (already contains enough sodium to season the meat). We BBQ them even in the cold winter.

Here is a nice suggestion of an Italian Vino pairing for steak and red meat:

Come prepare un sugo buonissimo! How to prepare a delicious sauce in 45 minutes!

Here are some essential tips on how to quickly and easily prepare a tomato sauce.

What you need:

  • Passatutto (to strain the seeds out of the tomatoes)
  • Extra virgin olive oil
  • 1 white onion
  • cloves of garlic
  • Fiammante peeled tomatoes (from Italy–usually works a lot better than a passata, or use your own tomatoes from the garden if climate permits)
  • Always use a wooden spoon! Metals can be troublesome if kept in a boiling pot

Directions:

  • Place chopped onion and garlic cloves in saucepan on medium heat (add a generous amount of olive oil and stir
  • place the “passatutto” over the saucepan and pour the tomatoes into it, using the handle, stir until the tomatoes are liquified
  • Clean the metal strainer because the seeds will gather here
  • After all tomatoes have been spun and liquified, place cover on the saucepan and let simmer on Medium heat for about 40 min (add water if the sauce is too thick)
